We've always been a fan of honey processed coffees but this is our first from Ethiopia. There are four levels of honey processing; white, yellow, red, and black. The longer the fermentation, the darker the fruit. The red is on the more fermented side while still being fairly clean. 

 

This coffee is vibrant with strong fruit notes. We taste flavors that remind us of raspberry jam and melon flavored candy. It makes for a light body with a winey note from the honey fermentation. Brews are aromatic and we find floral notes like rose. Overall you get a light and tasty cup.
